The creators of The Dolson in downtown Charlotte promised an eager community “comfort food reimagined” when they opened their doors this past June. Since, chef George Sztroin, and his crew have been working to make good on that promise.

The latest example is The Dolson’s weekend brunch menu, which debuted late this past summer. Filled with breakfast staples, such as French toast, pancakes, and biscuits and gravy, the menu consistently recreates brunch classics like the Poblano Egg Sandwich, Sweet Potato Waffles, and the Meatloaf Sammy.

“We’re always looking to up the bar a little bit,” Sztroin said. “We let our imaginations go wild, trying to kick it up a notch. We don’t make just plain waffles, we have sweet potato waffles with bacon inside of them. We make our own cream cheese drizzle to go on top of that, and then caramel sauce to go on top of that. We try to build layers of flavor. We don’t want any one-note dishes.”

Layers of flavor can be found in everything from the Big Burro to The Skillet. And, while the ingredients change for each dish, they all share something in common — freshness.

Everything prepared by the staff at The Dolson is made from scratch. The biscuits and gravy, which Sztroin said are a popular brunch selection, are made fresh each morning.

“It’s not fast food, we’re taking that extra time to make sure you’re getting a meal that stands out,” Sztroin said. “I have a fantastic crew that all has the same vision. We want to be proud to work here. Take a sense of pride in everything we do here, and I think it shows.”

Sztroin said all ingredients are purchased locally as much as possible.

“You have to have quality ingredients to provide a quality product,” he said. “You are going to see that in our dishes.”

Brunch is served Saturday and Sunday mornings, from 9 a.m. to noon and the menu features both sweet and savory selections, in addition to a stocked “Bloody Mary Bar,” and a selection of brunch specific cocktails.

Santa Claus will make a special appearance at brunch on Saturday, Nov. 25, beginning at 9 a.m. Families that stop in for brunch that morning can have their photographs taken with santa, and children can receive free hot chocolate and a candy cane.
